Raspberry Lemontini!

By Kate Riley April 22, 2012

Hello everyone, happy Sunday, I’m back and finally rested from the SNAP Conference!  It was a whirlwind three days, and I left Salt Lake City on Saturday completely exhausted.  I traveled with my sis, so we had a blast spending time together, plus I had the opportunity to meet a lot of bloggers I’ve never met and hang out with some blog friends too.  I didn’t snap many pics of the trip since I was running around everywhere, but I am looking forward to some of the recaps we’ll be reading in the upcoming days.

I promised the recipe for one of my favorite cocktails earlier this week, so here goes.  This one is fun for when you’re hanging out with the girls!  It’s a raspberry lemontini made with fresh ingredients that can be prepped in advance of your upcoming soirée.  Here’s the quick way to make them, enjoy!

Ingredients you’ll need: cocktail shaker, ice, citron vodka, Triple Sec, large lemons (1 for each drink), 12 oz. raspberries, 1 cup sugar, sugar rimmer, lemon wedges for garnish, lemon juicer, martini glasses.

To make the fresh raspberry juice, rinse your berries and cover them with 1 cup of sugar in a saucepan.  Over medium heat, stir until raspberries are completely dissolved, then using a mesh strainer, separate seeds from juice (scrape bottom of strainer with fork to assist).  Set aside juice to chill (may be prepared in advance).

When ready to serve, for each drink combine in a cocktail shaker filled with ice: 2 oz. citron vodka, 1 ½ oz. fresh raspberry juice, 1 lemon fully squeezed with lemon juicer, and 1½ oz. Triple Sec.   Rub a lemon wedge around the rim of a martini glass and dip in sugar to coat the rim.

Shake and pour into martini glass and garnish with lemon wedge.  Cheers!

Be back tomorrow with some scenes from our courtyard resurfacing project, until then, enjoy the rest of your weekend!

  1. Yum! About how much raspberry juice does this make? (for how many drinks?) I’m thinking my book club would love this, but we’re a big group. :-)

  2. These look so refreshing! I may just forget they have alcohol in them ;) Thanks for sharing, I will be making these very soon!

  3. Ooh, these look delish!! So that’s one lemon per drink, right? I just wanted to double check I didn’t misread it. I think I’ll be making these very soon. Thanks for sharing, Kate. I’m looking forward to the SNAP recap. haha I didn’t mean for that to rhyme. =)

  4. It’s been cold and rainy here (DC) all day, with more cold tomorrow. Kind of messing with my mind after all the beautiful spring weather we’ve had this year. I was ready for summer (and thus summer cocktails), and then got sucked back to reality. Sheesh. Before the weather went sour I did a post about my “Basil Imposition” Rum Cocktail recipe, found here: http://www.thebookofjimmy.com/the-holy-grail/. Also talked about an amazing cocktail serving idea that I found recently.

  5. Another fab martini! Love the glasses…do you mind sharing where you found them?

    • Hi Helen, I think i think i think… Marshalls? But I pick up glassware everywhere, it could have been Kmart, Target too…

  6. I can’t wait to try this!!! and have a feeling it will be repinned many times!!

  7. Yum–looking forward to trying these when it gets warm enough here in Chi-town!
